Who are Lolly?

Lolly is a hospitality technology specialist delivering innovative PoS, payment and smart data technology to the hospitality sector. Since its founding in 2009, Lolly has focused on making advanced technology accessible, simple and agile for businesses of all sizes, from SMEs to FTSE 100 companies.

What have you been up to in 2025?

2025 has been a significant year of development for Lolly, particularly around the integration of AI across all platforms. Alongside this, it has been a learning year in understanding the environmental impact of technology and the responsibility that comes with AI adoption. Lolly also began its journey towards ISO 42001, focusing on the safe and ethical use of AI, which will be completed in early 2026.

What are your plans for 2026?

Looking ahead to 2026, Lolly’s focus is on considered growth and continued product development. With four major product releases planned, spanning core hospitality technology through to more advanced AI solutions. Alongside this, Lolly will continue its work supporting the hospitality industry with practical, scalable technology.

Do you think Essex is a good place for business? If so, why?

Essex has been a very positive location for Lolly. Since moving to Braintree in 2020, Lolly has benefited from a strong talent pool, a healthier work environment and reduced commuter pressure. Being close to London while offering a different pace of working has helped attract great people and build a sustainable business.

How does Lolly help businesses adapt to changing consumer habits, such as cashless payments and sustainability demands?

Cashless payments are central to everything Lolly does. The company continually evolves its payment offering, ranging from traditional credit and debit card payments through to mobile wallets and blockchain-enabled payment options such as crypto.

Alongside payments, sustainability and ethics are embedded in how Lolly operates. The business focuses on practical measures, including reducing power and heat consumption, improving operational efficiency and actively offsetting its carbon footprint, with the aim of achieving full carbon offset by 2035.

What steps is Lolly taking to future-proof its platform against rapid changes in consumer behaviour and payment trends?

Lolly’s core principle is that successful technology depends on user adoption. The company is constantly listening to the people using its platforms and taking time to understand their needs and requirements, an everyday part of how Lolly operates. Technology is deployed very differently depending on the generation using it, from Generation Alpha through to Baby Boomers.

This ongoing focus on listening and adaptation allows Lolly to continue developing its platforms in a way that supports rapid changes in consumer behaviour and payment trends, while ensuring the technology remains practical, accessible and relevant to those using it.
